The Monday Campaigns, the nonprofit organization behind the Meatless Monday movement, reached out to its network of talented food bloggers, dietitians and chefs to find the most mouthwatering heart-healthy versions of comfort food classics around.

Heart-healthy fruits, veggies and whole grains are major stars in the recipes. All have been analyzed by Diana Rice, Meatless Monday’s staff registered dietitian, to ensure they meet heart-healthy guidelines for sodium, saturated fat and cholesterol content.

“Going Meatless Monday is a great step toward following a heart-healthy diet,” said Rice. “But it’s important that you don’t feel you have to completely give up your favorite dishes -- that’s no way to create a healthy eating plan you can stick to.”

The enticing recipes include Hearty Oatmeal and Greek Yogurt Pancakes, Roasted Butternut Squash Spinach Alfredo, Tempeh “Meatballs” with Roasted Romanesco, and a classic Tuscan White Bean and Escarole Soup from Jason Weiner, executive chef of Almond, New York and Bridgehampton.
