Newswise — CHICAGO—Food security and malnutrition are challenges around the world, but even more so in developing countries. The Institute of Food Technologists Students Association (IFTSA) and Tate &Lyle have announced the six food science student teams that are facing these challenges head on as finalists in the IFTSA Developing Solutions for Developing Countries Competition.

Each year, a new theme is chosen that focuses on a specific food and nutrition challenge in the developing world. This year, students were challenged to develop desirable products aimed at increasing pregnant women’s intake of calcium in the Middle East and North Africa.

A total of 56 teams submitted entries this year. Two winning teams will be announced at IFT16 in Chicago, IL, July 16-19. The six finalist teams selected to compete in the competition finals include:

International:

Bogor Agricultural University with Creve - an instant vegetables cream soup made from spinach, okra and milk, it is rich in calcium and dietary fiber.

Bogor Agricultural University with Sun-Ami - a high-calcium, iron, and folate traditional African flat bread with benefits from Moringa leaves, spinach and groundnut.

Universidad de Costa Rica with Hamilk - a milk-based shelf-stable beverage designed with Sudan's local ingredients to aid their pregnant women by increasing the intake of calcium, protein, iron, vitamins A and D, folic acid and water.

United States/Canada:

Cal Poly San Luis Obispo with Calihasa' - a nutrient-dense flavoring packet designed to be added to soups, stews and porridges by pregnant women in Sudan. The packet is single serving, made from all local ingredients and flavors, and gives women half their daily-recommended calcium intake.McGill University with Fitamin Multimeal - a ready-to-eat nutritious stew made of lentils, tuna, skim milk powder, tahini, carrots and tomatoes with added eggshell powder to boost the calcium content. For a complete nutritional profile to improve the nutritional status of children and pregnant woman in Yemen, a portion of stew can be combined with flour to make flatbread.

Rutgers University with MagiCal - An egg-shell based powder added in bakery products or dips, as a calcium supplement for pregnant women in the Middle East.

The first place team will be awarded $4,000, and the second and third place teams will be awarded $2,500 and $1,000 respectively.
