Some supermarkets are lined with gluten-free foods and signs marketing those types of foods, and lots of people are eating them to lose weight and for other perceived health benefits. While the 1 percent of the population that has celiac disease must be on a gluten-free diet, many people have unfounded beliefs about the nutritional benefits of such a diet, says Karla Shelnutt, a UF/IFAS assistant professor of family, youth and community sciences.
