Doctoral candidate Bijaya Upadhyaya and associate professor Moul Dey of the SDSU Department of Health and Nutritional Sciences examine flour samples used to study the prebiotic impact of resistant starch type 4, a nondigestible, chemically modified wheat fiber, in individuals with metabolic syndrome. During the study, participants and the researchers did not know which flour contained the special ingredient, which was shown to improve the balance of gut bacteria.
