New York City Mayor Bill de Blasio has announced that all NYC public schools will officially have “meatless Mondays” starting next fall.

Carol Parker, program leader for Cornell Cooperative Extension-NYC (CCE-NYC) Nutrition and Health Program Area, says she supports the decision for NYC schools to provide meatless meals on Mondays.

Parker says:

“In CCE-NYC we support this plan for Meatless Mondays. This helps to promote the Dietary Guidelines to vary protein sources and eat plant protein foods more often.

“We all need protein, but most Americans eat enough and some eat more than they need. Most people ages 9 and older should eat 5-7 ounces of protein food each day. Plant proteins are naturally lower in saturated fat and high in fiber, and are also less expensive sources of protein.”
