Newswise — CHICAGO–A team of food science students from the University of Minnesota have been named the winner in the annual Disney Consumer Products—Institute of Food Technologists Students Association (IFTSA) Product Development Competition during the IFT 2013 Annual Meeting and Food Expo in Chicago.

Food science college student teams across the country were tasked with creating a market-relevant, delicious and nutritious food or beverage retail snack product that integrates either a fruit, vegetable, low-fat dairy product or whole grains, is targeted to children 10 and younger, and incorporates one of the selected Disney character franchises.

The University of Minnesota team’s product is called Dusty Dippers, an allergen-free, cracker and dip snack containing a full serving of whole grains with an added punch of fiber and protein from garbanzo beans. Team members included: Lauren Gillman (team captain), Jordan Walter, Kirsten Ruud, Ann Pataky, and Brian Folger.

The winning team received a check for $7,500, and the runner-up team, from California Polytechnic State University, San Luis Obispo, received a check for $3,500 for their product called Mike’s S’Creamy Dip & Scare Me. All other teams received $1,000 for honorable mention.

Since its beginning in 1975, the IFTSA has grown to over 2,000 student members from around the world.
