Pumpkin Carving, Preservation

The drought that hit the Southeast this summer could mean more expensive and fewer pumpkins this Halloween. Alan Atkinson, Ph.D., of the UAB Department of Art and Art History is nationally known for his pumpkin carving ability and has suggestions on how to make the most of your pumpkin this season. Before carving the pumpkin use a crayon to draw the design. Use a small sharp knife for cutting. Don't cut all the way through the rind, make the first cut one-eighth inch deep, then go back and cut through. Cut the top off at a slant, leaving a notch in the lid for smoke. "If you carve your pumpkin two weeks before Halloween, by October 31st it's going to be pretty ripe. To save it, refrigerate it. My best suggestion is not to carve it that early, but to wait until a couple of days before the holiday.
