Feast Without Fat

Overeating at Thanksgiving may be one of life's guilty pleasures, but registered dietitian Beth Kitchin, R.D, M.S, of UAB's Eat Right Information Service says that with smart menu adjustments, you can remove some of the guilt while keeping the pleasure. Eat Right has developed recipes for an entire Thanksgiving feast that remove much of the fat and calories from a traditional meal. "By following our recipe modifications, you can reduce the amount of fat and calories by as much as one third while still having a Thanksgiving dinner to remember," says Kitchin. The recipes for gravy, cornbread dressing and sweet potato casserole are especially good fat/calorie reducers.
