Testing for Allergens

This month's Food Technology magazine discusses the current research, legislation and challenges involving food allergy testing.

The Food Allergen Labeling and Consumer Protection Act (FALCPA), which took effect in 2006, requires that food labels identify whether a product contains any food allergens or ingredients containing protein derived from allergens. Products not specifically formulated with allergenic ingredients may still contain traces of them as a result of cross-contamination during processing. Food and beverage manufacturers and ingredient suppliers must therefore test for the presence of these allergens in their products.
